Medium MISONO STONE= 1000 (finishing touch). It is highly recommended to sharpen this knife once a week (start form the roughest stone T1, then roughness T2, ending with stone T3). The stone must be previously dipped into water. For a good sharpening you have to let the knife slide on the stone without pressing it (inclination around 10°, except for the 714 between 15 and 20°) and insist more on the front side (twice as long as for the back side). Always start from the tip. The stone must keep a smooth surface (you can obtain this by rubbing two stones one against another).
